This recipe is simple, quick, delicious, and filling anyone can master on. All it requires is good quality chicken, a hot grill or oven, and some basic and aromatic Indian spices and ingredients.

Ingredients of Grilled Chicken:

  • 350 grams chicken( preferably leg and thigh pieces)

  • ½ teaspoon ginger paste

  • ½ teaspoon garlic paste

  • ½ cup yogurt

  • ½ teaspoon red chili powder

  • ¼ teaspoon coriander powder

  • ¼ teaspoon black pepper powder

  • ¼ teaspoon cumin powder

  • ½ teaspoon salt or according to taste

  • 1 teaspoon allspice(garam masala powder)

  • 2 tablespoon olive oil

Note: You can increase or multiply the ingredients used according to the number of persons.

Directions: How to make grilled chicken:

Step 1: Wash the chicken pieces.

In preparing this quick and easy recipe, your first step would be to wash the chicken pieces and clean them properly. Then spread the chicken pieces on a tray and prick it with a fork.

Step 2: Marinade

Now take a large bowl.  Put together yogurt, ginger paste, garlic paste, red chilli powder, coriander powder, cumin powder, black pepper powder, salt, and allspice ( garam masala powder). Mix them properly until well blended with the help of folk. Now add cooking oil and mix again.

Then,  add the chicken pieces and coat the mixture properly over all the chicken pieces. Cover the bowl and refrigerate it for at least 8 hrs or up to 24 hours. This will help all the spices to easily absorb in the chicken, making it juicy and tender from inside.

Step 3: Grill it to perfection and serve hot:

Take the marinated chicken out from the refrigerator.  Preheat the grill. Brush some cooking oil on the grilling tray. Remove the chicken pieces from the marinade and place them on a grilling tray. Grill them approximately for 20-25 minutes on medium to low heat, turning them in between. Check the chicken when it’s fully cooked and tender. Dish it out.

Serve hot with a salad made from fresh vegetables (tomatoes, onion, lettuce, lemon, cucumbers) and raita(yogurt blended and combined with roasted and crushed cumin seeds, black pepper, salt).

You can enjoy the meal with hot parathas and chapattis, even with plain biryani, pulao, and boiled rice.
